Yakima Cherry Almond Waffles

Happy Father's Day to my mother who has always been there in both roles as mother and father to me!

I spent an amazing day yesterday with some fellow foodies in Yakima learning all about one of my absolute favorite foods - cherries!

So in honor of my mom and Yakima Cherries I made Gluten Free waffles with almonds and perfectly ripe Bing Cherries ... just a little bit of syrup and non-dairy earth balance butter ...

This is a first, albeit short posting, in a series all about the "Life of a Cherry" from Yakima, WA.

Gluten Free Custom Choice Cereal

I am really into cereal these days. Maybe it has to do with the change of the season or the fact that it is so quick and easy to make. If you are like me, a good Gluten Free cereal is hard to find. I like my cereal to have good nutritional value, good protein, fiber, low fat and above all flavor.


No worries, I recently found a cereal that allows you to pick and choose the ingredients to create your own special mix. The company is called Custom Choice Cereal and it is made in a dedicated Gluten Free facility. The really fun thing is that when you go to the website you literally pick the base of the cereal, add the ingredients like dried fruit, nuts or seeds. Then just before you wrap up your order you get to name your Custom Choice Cereal! - I was really creative with my name ... I selected Cinnamon Granola made with brown rice, I added goji berries, cherries, almonds and organic coconut chips. I almost had a hard time choosing because I wanted it all. If you add more than 3 ingredients it really starts to turn into a granola or trail mix. So order one cereal breakfast mix and another that is loaded up for a trail mix. I like mine with coconut milk or dry out of the bag. It is a great way to make sure that you are getting ingredients from a dedicated gluten free facility and that is tested with the EZ Gluten testing strips. The website also has nutritional label info that updates as you add each ingredient. How cool is that?

I had a really great conversation with Hajo Engelke, the founder of the company and was thrilled to hear that he decided to start this company for a friend from college that was Gluten Intolerant and had a hard time finding good, healthy cereal. The company is based out of Durham, North Carolina.

I love to hear the stories of companies that realize there is a need for better quality Gluten Free food for a friend or family member. I love to hear that there is support for us Gluten Free Foodies, that is why I support those companies.

When I purchased my cereal, I was amazed as to how quick I received it. I got it within 3 days - NC to WA! not bad! It was also fun to see your label and the sturdy resealable packaging. Very special!

Favorite Creamy & Crunchy Blueberry Breakfast

I used to love Grape Nuts and yogurt for breakfast.

Well my friends, I have found that wonderfully creamy
and crunchy Gluten Free and dairy free combo again!

and


Wow! I think it is a better combo than what I remember and longed for ... little crunchy round pieces that keep their crunch until the very last bite. They have a very similar flavor to grape nuts, but no nuts. Perky's Crunchy Flax is made with sorghum, ground flax seed and sweetened with fruit juice and honey! I have tried it with various non-dairy alternatives like coconut milk, hemp milk and chocolate hazelnut milk - all very good ... but the combo with the yogurt is the perfect blend of creamy and crunchy!

Gluten Free French Toast with Dried Cherries, Almonds Coconut and Honey

 Wow! What a week!!! it has been in the teens and 20′s all week and I am done with this deep freeze! I decided today that I need a good, hot and hardy breakfast to kick start my day. My power has been out off and on all week and I have not had access to my buddy – my computer! This breakfast is a well earned treat.
I woke up starving for a BIG HOT GLUTEN FREE BREAKFAST!

So I decided to make GLUTEN FREE FRENCH TOAST WITH DRIED CHERRIES, ALMONDS, COCONUT AND HONEY WITH JONES’ SAUSAGE … what a mouthful!

This is how I put it all together … for a single serving
Earth Balance Non-Dairy Non-Soy butter
1 egg
cinnamon
Nielsen-Massey vanilla
Soy Delicious Coconut Milk – Unsweetened
1 thick slice of homemade Gluten Free bread
dried cherries
chopped almonds
coconut flakes
honey or agave

Mix an egg in a bowl with about a tablespoon of Coconut Milk, cinnamon and 1 teaspoon of vanilla. Dunk the slice of Gluten Free bread into the mixture and turn over to allow it to absorb. Put some butter in a pan over medium heat. Add the soaked slice of bread into the pan and cook on both sides for 2-3 minutes. Turn off the heat. Put 2 frozen sausage patties in a microwave safe bowl with a paper towel on top and cook for 1.5 minutes.

Put the Gluten Free French Toast on the plate with the sausage and top with dried cherries, chopped almonds, coconut flakes. You can use any dried fruit – cranberries, strawberries, blueberries, apricots. You can also add any of your favorite nuts and seeds – pistachios, walnuts, pecans, cashews, pumpkin seeds. I like to add either golden honey or agave to make everything glisten and just slightly sweet. Total prep time is 10 minutes. Try to get a bite with everything on it…don’t forget the sausage!

Gluten Free Hot Cinnamon Crunch Granola

Did you know that there is really good  GLUTEN FREE GRANOLA?  Have you tried Enjoy Life Food’s Granola? I love it – hot in the morning with Coconut Milk. This is one of my favorite, fast and easy ways to enjoy breakfast in the morning. I put about a cup of Coconut Milk into a bowl with a 1/2 cup of Enjoy Life Cinnamon Crunch Granola.

I admit there are a few things that I miss, but just as I think about it, another great company delivers. It is almost as if they are in my head or my stomach as I begin to think … would it be nice to have some granola – better yet some gluten free and allergy friendly tasty granola? I highly recommend that you look for this the next time you go shopping. Ask your grocer to carry it if you can’t find it. I put some in snack size zip lock bags or a small container and take it with me in the car. I always get hungry when I am out running errands and this is a great way to stick to a gluten free lifestyle. It is slightly sweet, with cinnamon and raisins. It definitely satisfies the crunch that we sometimes just need in a healthy snack.

Gluten Free Sweet Potato Mash

Sweet potatoes aren't just for the holidays ...

Who knew that Sweet Potatoes could be so good?

Did you know that the sweet potato isn’t just for holidays?  It is allowed to be enjoyed throughout the year.  As a matter of fact,  I know it might sound wierd to some people but I really love sweet potato mash for breakfast.  I usually add some Unsweetened Coconut Milk to a bowl with about a cup of Sweet Potato, add some Cinnamon and Nutmeg to taste.  Sometimes I add Ginger depending on my mood.     Once everything is heated then I mix it together and add Walnuts or Coconut flakes.  It is a really easy and satisfying way to start the day.   Sweet Potatoes are a really great way breakfast food because they are high in Beta-Carotene, B & C Vitamins, Potassium and Iron.   Best of all they are low on the Glycemic Index, the Unsweetened Coconut Milk is high in MCFA’s and the Walnuts give you Omega – this will help give you energy and keep you satisfied until lunch.

This is how I figured out how to cook a sweet potato, fast and easy.  I will wash it, pierce it 3-4 times with a knife, put it on a plate and  bake it partially in the microwave, for speed.  I take it out with hot pads and then I will drizzle some Olive Oil on top, I then wrap it in parchment paper, then foil and put it in a baking pan for 20 minutes at 350 degrees.  When it comes out I let it cool for a few minutes and then unwrap.  The skin slides right off and you have a treat ready in no time.  30 minutes tops!  I usually eat some hot out of the oven with a butter substitute like Earth Balance - Soy Free and Dairy Free.  I store the rest in the fridge in a glass, airtight container and it is ready for the rest of the week.

Gluten Free Spicy Eggs and Potatoes with Bacon

Ahh…It’s Sunday morning and I just finished my yoga and I am hungry! It is rainy and cool so I think it is time to heat things up with my Sunday morning special …. Spicy Eggs and Potatoes with Bacon.

 

 

I really like quick and easy on days like today -
Put some olive oil in a pan
Slice up 4-5 small golden potatoes
Spice up the potatoes with Paprika, Chili Powder, a dash of Garlic, Rosemary, Salt and Black Pepper

Slice up 1 or 2 strips of Niman Ranch Gluten Free Bacon and add it to the pan.

Heat everything in pan until the potatoes are cooked and crispy.
Scramble up some eggs and add pepper flakes to your desired heat! Eat!
