Want gourmet Mexican food at home but don’t think you have the time or the energy? Well, have I got a deliciously easy tip for you!   Rick Bayless’s Frontera Sauces and Marinades.

Gluten-Free Fiesta In As Little as 20 Minutes!

Rick Bayless has created some of the tastiest Seasoning Sauces and Marinades and the best part is that most are created without Gluten.  Marinade some steak or use the Seasoning Sauces for chicken, pork tenderloin or seafood.  The Seasoning Sauces infuse the authentic flavors of Mexico into the meat while keeping it tender and juicy.  Even if you do not have a grill, Frontera sauces will taste as if you have been “putting in the hours” over a hot grill.  The little packets are filled with Smokey chillies, vegetables and citrus flavors that create various flavor profiles specifically for the meat that you choose to eat. Put Tacos, Enchiladas, and Carnitas on your menu for your fiesta!  Not a meat eater, no problema! I think any of the sauces would be great on roasted veggie and bean tacos in corn tortillas too!

I love that the seasonings are wet.  I think that it keeps the taco meat moist and saucy! Marina Market Offers Unique Gluten-Free Food

Come close if you want to know the best kept secret in Washington.  If you love licorice, lingonberries and lutefisk I have the place for you!  Marina Market offers a truly unique selection of Gluten-Free food.  Yes, I said licorice and yes they have a selection of Gluten-Free licorice too! Yes, you lingonberry lovers there is quite the selection for you too! Everything from jams, syrups, to sparklers and a tub-o-lingonberry jam! Never had a lingonberry, they taste similar to cranberries only a tad sweeter and they make everything prettier with a vibrant red color.  I hear that lingonberry jam goes with everything from biscuits, Swedish meatballs to pudding!      I am quickly becoming a lingonberry lover too!

I have so much fun every time I go into Marina Market to see what Andrea and Jonathan Rowe, the owners, have added! Andrea and I share a love for Frontera Foods and Rick Bayless’s new sauces and marinades that are Gluten-Free.  Rick’s daughter, Lanie began eating a Gluten-Free diet at a young age.  Luckily for Gluten-Free Foodies, Rick realizes the need for delicious Gluten-Free foods. Andrea gave me some samples (thanks) of the new Frontera sauces and marinades and I absolutely love them!  It makes any meal fast, easy, Gluten-Free and flavorful!

So the next time you travel to Bainbridge Island or are in Kitsap County, make sure you stop by historic downtown Poulsbo and visit Marina Market.  This Norwegian market offers the best variety of Gluten-Free foods from around the world.  Most customers will say that they haven’t found these products since childhood.  My mom is one of them and she just loves it when I bring her some marzipan candies, Swedish meatballs and a lutefisk TV dinner.  (Ok ,the lutefisk TV dinner is a story for another time, please don’t get me started!)

Gluten-Free Pizza with Sweet or Hot Italian Turkey Sausage

I love making my Gluten-Free Pizza with Sweet or Hot Italian Turkey Sausage and making it healthy!

Thanks to Jennie-O Turkey Store and their very tasty, Gluten-Free Sausage.  Choose either, Jennie-O – Lean Sweet Italian or Lean Hot Italian Turkey Sausage.  Now you can enjoy the flavor of sausage with 65% less fat than pork sausage. I like to pre-cook my sausage in a pan, always to 165 degrees.  Once the sausage is done I remove it from the heat and set it aside to cool.  I must admit the aroma that wafts throughout my kitchen while I am cooking this sausage makes me extremely hungry. Once it cools, I admit , I have to oversee quality control in my kitchen, no more resistance as I dive in to try a bite or two! So much flavor and very little fat makes me feel confident about using Jennie-O products.

 While the sausage is cooking, I heat my pizza stone and my oven to 400 degrees.  I bake my Gluten-Free pizza crust.  While the crust is baking I get my toppings ready. I cut the sausage into 1/4 inch thick slices. I make my Kale and Marcona Almond Pesto sauce. Once the crust is ready I add the pesto and sausage.   I add just a little sprinkle of cheese, a combination of parmesan and mozzarella, then a generous hand of  chopped red onion. *This pizza is great without the cheese if you avoid dairy.   When I take the pizza out I add fresh minced basil and red chili pepper flakes!  The heat from the pizza releases the aroma of the basil, chili peppers and the sausage!

Dive in everyone! 

The key to healthy cooking is adding flavor without fat.  I  also make my Gluten-Free pizzas with my favorite roasted vegetables, Summer squash, sweet Walla-Walla onions and Jennie-O Lean Hot Italian Turkey Sausage. I love the combination of the sweetness from the veggies and the spicy kick from the sausage.  Really any of your favorite combinations of vegetables and Jennie-O sausage will do! Iced Cinnamon Orange Hot Cocoa

Iced Cinnamon Orange Hot Cocoa

Recently there was a study that was shared on every news channel, news paper and all over social media talking about how

2 Cups of Cocoa A Day Improves Brainpower

Well since I am an avid chocolate lover and supporter I had to test this theory out.

So of course this study comes out in the middle of the “Hottest Summer on Record” so how the heck are you supposed to really enjoy – Hot Cocoa  and test this theory out?

So I decided to come up with my own recipe to share with you,

so that we can all partake in this study.

Iced Cinnamon Orange Hot Cocoa was created with quick thinking and enthusiasm.

My recipe is Gluten-Free, Diary-Free and Sugar-Free

Iced Cinnamon Orange Hot Cocoa 

2 servings 

1 rounded TBS Pernigotti Cocoa Powder

2 cups unsweetened coconut milk – SoDelicious

1 Tbs light coconut milk aka cream, Native Forest NON-GMO, can

1/4 tsp cinnamon

3-4 Orange slices, cut into 1/4 inch

2 Mason Jars and straws

2-4 Big Cubes of Ice, slow melting

Add the coconut milk and cream to a pot and heat over medium heat just hot enough to incorporate the ingredients.   Add the cocoa and cinnamon. Use a whisk for 2-3 minutes to mix the ingredients and add a little air or froth.

Slice the Oranges and add them to the Mason Jars.  Add the large Ice Cubes 1-2 per jar or glass.

Carefully and slowly pour the hot cocoa into the Mason Jars over the big block ice cubes.

Add the straws, top with some Orange rind and sip slowly while you think about all your favorite memories!

I thought I would include a news video about the health topic mentioned – the Harvard Study.  Please be patient through the commercial and a few other helpful health tips before they mention the Hot Cocoa Study!

 

Let’s just say that I have made this a daily habit – 1 Iced Cinnamon Orange Hot Cocoa ever since I heard about this study on August 7, 2013.  I haven’t missed a day yet or felt the need for a reminder to put it in my calendar!

It must be working!

Gluten-Free Gimbal’s All Natural Licorice

Made in the USA! Gluten-Free Gimbal’s All Natural Licorice Scottie Dogs are so soft and cute!         I am a big fan of these Licorice Scotties! Let me just say that I bought these for my mother because she loves licorice.  Honestly, I usually prefer something else like a hard candy or chocolate bar. When I looked at the bag I was very impressed that they were not only Gluten-Free but Allergen Free. So I bought the bag for her as a treat.

We opened the bag and when I saw the cute Scotties and felt how soft they were I couldn’t resist.  One bite and I was hooked! I love love love Gimbal’s Natural Licorice Scottie Dogs! The flavor is good and natural but not too strong.  The candy is kinder on your teeth, not too sticky.

Gluten-Free Brunch Sweet Roasted Tomatoes Spicy Potatoes and Poached Eggs

I love a lazy Summer Sunday morning drinking coffee, watching CBS Sunday morning and making an easy savory brunch!

Slice your favorite Organic cherry tomatoes.  I used my mother’s home-grown sun gold and sweet 100′s.  Finely chop some onions and pre-heat the oven 325 degrees.  Toss the tomatoes and onions in some olive oil, a pinch of sea salt, black pepper, oregano, and thyme. Place the mixture on a parchment lined baking pan and spread it out. Cook for 1-2 hours until the tomatoes begin to caramelize.

Slice some fingerling potatoes, onions and Summer squash.  Roast them in a pan with some olive oil, sea salt and pepper.  Add a dash of smoked paprika, Aji Amarillo, and oregano. Cook for 20-25 minutes while turning the mixture to cook evenly.  Poach 1-2 eggs per person.

Serve your Gluten-Free Brunch on top of a pile of Sweet Roasted Tomatoes and Spicy Potatoes and Poached Eggs. Add a small pinch of smoked sea salt, black pepper and hot sauce to your desired spiciness. I think this is my new favorite Gluten-Free Brunch!

TIPRoasting Cherry Tomatoes is a make ahead project but you can do so many things with them once they are done.  You will see that it takes just a few minutes to prepare.  The hard part is having the patience to let them cook.  Make as big of a batch as you can. Your house will smell amazing and people will come to your door wanting a taste of what you are cookin’ up!  I like to make appetizers with it and use it as a topping on everything including sandwiches burgers and pizza.  One of my favorites is serving it with some Gluten-Free bread or thin pizza crust.  This is perfect to smear on some soft creamy cheese and add the tomatoes.  In my opinion, the tomatoes are perfect … alone … in the tastebud spotlight! The GF bread just helps the Sweet Roasted Tomatoes get to your tastebuds! This bite really tastes like a warm Summer day!

Gluten-Free Gratify Yogurt Pretzels

When I was growing up in Texas my mom worked at a gourmet food store.  They sold yogurt pretzels.  Yogurt was not a big thing back then and it was not something that I really liked.  The idea that yogurt was dried and on pretzels made me freak out!

… let’s just say that after my first bite I know what it meant to have that

perfect bite of salty sweet.

 When I was diagnosed with Celiac Disease in 2004 I realized that my love for certain foods, including pretzels, let alone yogurt pretzels, would have to be a past love.  The other day when I saw this blue bag of Gluten Free Gratify Yogurt Pretzels, my heart skipped a beat!  I bought the bag with low expectations.  You see, I had tried some from another company a few years ago, they were horrible and fed to the garbage immediately.  I had to completely erase my taste memory from that very, very bad aftertaste of my first try of GF yogurt pretzels. 

  I took a deep breath, bought the bag and went to the car.  Just as I was about to drive away, I opened the bag and took a bite of one.  Let me just say, we went back into the store and bought the last 2 bags on the shelf.  Gluten Free Gratify Yogurt Pretzels are awesomely addictive. I have to tell you that this bowl was full for a few moments, just enough time so that I could snap the picture to share with you.

Gluten Free Gratify Yogurt Pretzels are a great treat to take with you for a road trip, picnic or a day at the beach!
