I’ll bet you have fond memories of gummy bears as a kid!  I know I do.  We used to lick the back and stick them on our collar and wear them all day around school.  It was what the “cool kids” did! I remember bringing a bag of gummy bears on field trip days and sharing my bag with everyone.  I loved all of the flavors but especially the red ones! The bag never lasted past the bus ride to our destination that morning but we all sure had fun with our gobbling up our gummy bears.  Such a fun kid memory.  I think that is why I pick up a bag when I see them at the store every now and then. I like to have them around to put in my picnic bag or for a road trip.  I make sure to buy the Surf Sweets because they are Gluten Free, Organic and natural.  I want the best, no guilt treat and maybe I just want to feel like a kid for awhile too!

Gluten Free Has Gone To The Dogs!

Yup! My pup, Mac is officially Gluten Free!
I have discovered some wonderful Gluten Free dog foods at
one of my favorite places on Bainbridge Island, Bay Hay & Feed.
March 1 is Mac’s Birthday so I made him a special
Gluten Free Birthday breakfast using Wellness Simple Dog Food.

Sound familiar? The symptoms are so similar to our food allergies.
The ladies at Bay Hay & Feed told me about their new products – Wellness and Limited Grain and Mac has been so happy ever since.  He particularly loves the  -

This is really great for me too because every time I feed him or gave him a treat I had to wash my hands really well because most dog foods and treats contain wheat, barley and oats.  I have also made the switch and ditched buying treats for him.
 When he is a “good boy”… always … I just give him a piece of his food!
It makes us both happy foodies!

Organic Kale and Marcona Almond Pesto – Let it meld!

GF No Dairy Organic Kale & Marcona Pesto

 Just a few simple ingredients to make a new kind of pesto that will make your taste buds dance with joy!  Use as a topping on your home made Gluten Free Pizza, Gluten Free Pasta or on top of crusty bread or crackers.

This new pesto is sure to be your favorite and is good for you.

The Lacinato Kale is  packed with vitamin C, K, beta carotene and calcium.

Easy to make Kale Marcona Pesto in a blender!.

Organic Kale & Marcona Almond Pesto

5-6 Organic Lacinato Kale leaves

1/2 cup Marcona Almonds

2-3 Organic garlic cloves

1 green onion

1/4 cup lemon juice

1/4 cup Spanish Olive Oil

pinch Matiz Espana flor de sal

Fresh ground black pepper to taste

Add all of the ingredients, chop and blend in a food blender/mixer or processor.

Pour into a jar and place into the refrigerator for at least 2 hours prior to serving to let it meld!

The acid from the lemon juice will help to break down the kale and the saltiness will compliment the sweeter side of the Lacinato Kale aka Dinosaur Kale.

I am going to add this to my homemade GF Pizza tonight and add dry roasted tomatoes, artichokes and peppers.

I know it will be amazing with fresh GF pasta and I have already had several tasting samples on my favorite crusty GF bread and crackers.

Great way to get your super greens into your weekly menus at home.

This one gets my GF Fav vote !

Savory and Spicy Tortilla Black Bean Soup

Warm me up and make it spicy just the way I like it! 
I love Tortilla Soup and this is the perfect soup to warm you up when the weather outside is misbehaving! Rain or Snow, Pacific Foods Organic Soup Starters  are the perfect way to get your soup off to a tasty easy start.  
I call it slow cooking, at medium speed, without the can ... in 2 hours!

It was really was easy to make this soup with just a few fresh 
 ingredients and dried spices that I already had at home.

Let me just remind you that I am from Texas and I like a kick in most things that I eat, especially if I want my food to warm me up! So please adjust your pepper spices accordingly to your taste.

I usually soak black beans or some sort of beans at least once a week.  After a sunny but cold, brisk walk, I came home with an appetite for something flavorful and warm! I was hungry and chilled and looked in my GF pantry - Tortilla Black Bean Soup! It just so happens I soaked some black beans overnight. 
After a quick rinse, I placed the beans in my 5 quart Le Creuset. 
I pre-heated the oven to 350 degrees.


The Pacific Foods Organic Tortilla Soup base is made with tomato, green peppers, onion, chili powder, garlic, cumin, cayenne pepper, coriander and a hint of lime.

Add all of the ingredients to the pot, cover with a lid and let it cook for 2 hours.

I added the following ingredients - 
1 cup chopped yellow onion
2 Tbs Olive Oil 
1 tsp Oregano or Italian Seasoning, dried
2 cloves garlic, chopped
1 tsp smoked sea salt 
fresh ground black pepper
2-3 pinches Red Pepper flakes
1 dried Aji Limo Pepper 


1 1/2 cups Organic frozen corn - add at the end


  
Carefully take the pot out of the oven.  There will be steam when you remove the lid, so please stand back.  Add the frozen corn and stir it into the soup.  Let it sit approximately 10 minutes while the corn heats up in the soup.  This will help keep the corn flavorful and crunchy by not over cooking it.
The Organic corn gives the soup the perfect sweetness to counter the spicy peppers.  
The texture is nice with the black beans which make it a little heartier.  
YUM!

Serve in your favorite deep soup bowl with a dish underneath to hold 
your additional tortilla chips and top with your favorite ...

Toppings 

avocado slices or guacamole
green onions
jalapeños
cilantro, chopped

roasted chicken, shredded or chopped - optional
pepper jack shredded cheese - optional

Pacific Foods sent me some of their Organic Soup Starters to try. 
I am so glad they did! 
The also make Beef Pho, Chicken Pho, Vegetarian Pho and Tom Yum!
The soup bases are approximately $3.49-$3.69 for a 32 fl. oz. carton.
Look for the QR code on the carton for recipes or make your own!



I opted for the soup sans cheese and meat! 

It is so satisfying you just may "not" have leftovers to share the next day! 
I highly recommend stashing a serving in a tightly sealed, inconspicuous spot in the back of the fridge. One blissful thought - just knowing that you have a soup waiting for you the next day, so you can curl up in front of the fireplace with a blanket and a good book! 
As I always say, letting it meld makes it that much more magnifico!

You know that amazing aroma when you walk into a bakery? 
That intoxicating wafting aroma of fresh baked artisan bread breezes across your face...

Well! my Gluten Free Foodies friends, you too can have this in your home!
Fresh baked Gluten Free Artisan bread that will keep your family hovering around the kitchen and neighbors coming over to find out when the get a slice! 

Trust me you will not believe your eyes or your tastebuds with - 
Luce's Gluten Free Artisan Bread Mix that you bake at home.
It is so delicious even non GF people will love it!  

It is so easy all you need is warm water, a few minutes to mix and spread on the parchment paper and slide into the bag.  Everything but the water is included you don't need to add a thing!

Apple Rum Charlotte Gluten Free & Downton Abbey Style

and let's make some modern day 

Apple Rum Charlotte Gluten Free & Downton Abbey Style 

Just in case you wanted to invite the ladies over for tea, noshing and telly while enjoying 
this weekend.
I couldn't resist updating a recipe that I saw in the 
The article talks about the blog and recently published book 
Pamela's blog - Downton Abbey Cooks
 is quite amusing and filled with everything Downton Abbey!


I say I updated it because I wanted to be able to eat it, of course had to make it extra special with a few splashes of dark rum and Luce's Gluten Free Artisan Holiday Spice Bread.
Since it is seasonal you may only be able to get it for a short time.  
The Holiday Spice bread has a wonderful cinnamon flavor.
No worries, I think the New Italian GF bread from 
Luce's Gluten Free Artisan Bread will work just fine. 
Just use some extra cinnamon!

Follow the directions on the bag.  It is so easy.
Mix it with warm water, place on the paper, then in the bag.
Bake for 85 minutes.
Take out of the oven.
Let cool on a rack.
You will need 1 loaf for this recipe.
This also allows for a little snacking while making the 
dessert.

Apple Rum Charlotte Gluten Free Downton Abbey Style

Ingredients
3 eggs
2/3 cup heavy cream
2 Granny Smith Apples - peeled, chopped small pieces
1/2 cup room temperature butter, approximately - to spread on bread, cook apples and for ramekins
1/2 tsp cinnamon
2 tsp Nielsen Massey Pure Vanilla Bean Paste (GF)
3 Tbs light brown sugar
1 loaf GF Cinnamon Bread - Luce's GF Artisan Holiday Spice
2 Tbs dark rum
1 Tbs confectioners sugar - optional to sprinkle on top

Serves - 4, well it makes enough for 4 ramekins -
It is up to you if you want to share!

Don't forget the fresh whipped cream or Vanilla Ice Cream, on your shopping list, if you desire!




Cook the apples in a pan with 2 Tbs of butter, brown sugar, vanilla, cinnamon and 1 Tbs dark rum.
Cook for 10-12 minutes until well coated, yet still a bit of a bite or a crunch.  
Set aside until ready to assemble.

In a pitcher, mix the heavy cream, eggs and 1 Tbs of dark rum.  
Use a whisk to mix well. 
Mixing this in a pitcher makes it easier to pour into the ramekins.

Cut 6-8 thick slices of the GF bread.
Butter one side of the bread and then cut into chunks approximately 1 inch.
Butter the inside of the 4 ramekins.


Add 4-5 pieces of bread to the bottom of the ramekin.
Pour a little of the egg and cream mixture and let it sit for a minute or 2 to allow the bread to absorb.
Divide the apples up evenly and add the cooked apples on top of each ramekin.
Pour a little more of the cream and egg mixture on top.
Add 3 more pieces of buttered bread chunks on top of each ramekin.
Pour the rest of the egg and cream mixture.
Bake at 350 for 20-25 minutes.
Let cool on rack for 5 minutes before serving.
Loosen with sharp knife or serve in ramekin.
Serve warm with a little confectioners sugar sprinkled on top.


 


As I said before, if you want to go all the way ...
top with
Vanilla Ice Cream or Fresh Whipped Cream



In the meantime, go bake and enjoy your weekend.

Spanish Huevo Sandwiches

Nothing like a lazy Sunday morning listening to Pink Martini while lingering over the newspaper online and sipping coffee.  All that excitement sure does get my appetite going.  
Thank goodness I bought some Gluten Free Spanish Rolls 
from my new favorite dedicated Gluten Free bakery in the Pike Place Market

Tonyia makes the best Gluten Free Spanish Rolls 
soft lovely air pockets full of Manchego cheese, peppers, paprika and thyme!


Spanish Huevo (Egg) Sandwiches

You will need 1 egg and a Spanish roll per sandwich.
I use olive oil for the pan and the egg ring.
Butter or Earth Balance non-dairy, non-soy buttery spread for the rolls.

Tools
at least one non stick egg ring 
silicone spatula
small sharp knife with a point
small plate to the side
heat safe gloves

Cut the rolls in half and smear the buttery spread on both pieces. 
Heat a non stick pan and drizzle approximately 2 Tbs of olive oil on the pan.  

Use your fingers to spread some olive oil on the inside and bottom 
of the ring even if the ring is non-stick.

Place the ring in the pan and let them both heat for 1-2 minutes.
Crack an egg into the ring. 
Add a pinch of smoked sea salt and the dried aji peppers.
Be sure to wash your hands after using the peppers.

Now here is where you have to make a decision ... 
ooey gooey sandwich aka yolk not broken
or 
not gooey.

If not gooey, use a pointy knife to cut through the yolk.
Let the egg cook for 1 minute.

When you see the egg cook or turning white and rise to the top of the ring, 
slide a silicone spatula under the egg and ring.

Hold the handle of the ring with a heat safe glove and place
 all of it on the dish to the side.

Use the knife
 to loosen the egg from the ring. 
Remove the ring while keeping the egg on the spatula. 


Gently turn the egg over while placing the egg back into the pan to cook the other side.

Place the rolls buttery side down, onto the pan to heat up while the egg continues to cook 1-2 minutes.
Remove the bottom of the roll, place it on a plate, add the egg onto the roll and then the top.



If you have Spanish Chorizo and want to make this a heartier sandwich by all means go for it!

Coffee and … "Really Awesome Gluten Free Bakery Treats"!

I met the most amazing family today! 
Tonyia Smith owner, executive pastry chef and her cousins Jerry Jones and Dedrick Hairston at 
Coffee and Specialty Bakery - 1500 Western Ave in the Pike Place Market! 
The name is actually a fun family story ... Tonyia's grandfather used to go into this cafe in Chicago and everyone at the cafe would order ... coffee and ... 
he used to talk to his family about this place and it just stuck with them.  
So the real insiders name is 

Coffee and ... you fill in the blank ...

My fill in the blank is ...
 Awesome Illy espresso Coffee with awesome Gluten Free Cinnamon rolls, baguettes, madeleines, amaretto cookies, brownies and sandwiches that are different every day of the week!  

I have to say that after talking to Toniya, she really has a passion for making delicious Gluten Free baked goods and sandwiches.  She went to Seattle Culinary Academy where she studied specialty breads and desserts.  She had a project that was for Gluten Free baked goods.  She researched, studied, tried some recipes and got a good grade for the project.  After she graduated she realized she was not satisfied and wanted more.  She had a conversation with her mother about her project and baking Gluten Free. Her mother works in the medical industry and explained to Tonyia about Celiac Disease and that there is no cure only a prescribed life long strict Gluten Free diet.  
Tonyia got in the kitchen and started pouring her heart into her Gluten Free baked goods!
From that point on Tonyia knew that she had to make some delicious Gluten Free baked goods that were like traditional bakery treats! 

I can tell you that Tonyia loves what she is doing! You can taste the love that she pours into her food.
Although she is not Gluten Free she has met numerous people including her business mentor, Bernard and his family are Gluten Free.  It was by a serendipitous event that Tonyia and Bernard met when she was in the midst of setting up her new business.  Her bakery has been open since June 2012.








The bakery also offers sandwhiches that are daily specials. 
Today I had a Po'boy Sandwich NW Style - Shrimp coated in a flavorful, yet light GF breading, slaw that was the perfect blend of creaminess, crunchy, sweet and tart all on a freshly made baguette!

Gluten Free Cinnamon Raisin and Eggnog French Toast

Oh my goodness!
I went to make breakfast this morning and realized with all the Christmas baking I am out of eggs!
No worries, I am going to make
Gluten Free Cinnamon Raisin French Toast with Eggnog!
Well just think about it, Eggnog is made with all the ingredients that you need to make French Toast right?!?! Eggs, cream, cinnamon, nutmeg and spices. So I tried it and it was perfect!
The best part is that on Christmas Eve I received a very sweet gift from
THANK YOU! 
It was a trio of their new certified Gluten Free breads that they
started baking in a dedicated Gluten Free facility in Seattle.
Seeded Cinnamon Raisin
Sunny Seeded White 
Super Seeded Multi-Grain
The breads are GF, DF, SF, NF and Kosher.
I really like the new colorful packaging.  The breads are sold in a 2 layer bag.
The inner oxygen-free packaging allows the Gluten Free bread
to stay fresh for weeks, if your family doesn't eat it all first!
This recipe is so easy.
Heat the pan to medium high.
Coat the pan with 1 tablespoon of butter.
In a wide dish, pour approximately 1/4 cup of Eggnog - the real stuff made with eggs and dairy.
Place the slices of GF Cinnamon bread in the bowl and allow
the bread to soak it up on both sides.
Carefully place the Eggnoggy bread in the pan.
Reduce the heat to low.
Cook each side for approximately 2-3 minutes.
Serve warm with butter and maple syrup!
Sometimes you just need to use your noggin' to get things done in the kitchen ... literally!
