Gluten-Free Clementine Waffles

Regardless if this is the first post that you have read or the 500+ post, you need to know.  My name is Lisa and I am addicted to my Gluten-Free waffles.  I do not make pancakes because I am obsessed with waffles.  I love the crevices that allow the butter or non-dairy buttery spread, syrup and various toppings to hide in.  I love the crispy with the airy texture.  I love that I can make them sweet or savory.  I love their character, golden with smooth and sometimes nubby edges that are fun to eat. I love that there is never an identical waffle as the last one you just ate. I love to eat them with my fingers as the syrup runs down my hand.  I love that I can enjoy them any time of day or night.  I love my Gluten-Free waffles because they are perfect for every occasion, comfort, celebration or just to satisfy my craving. I especially love my Gluten-Free waffle, directly in front of me, that is hot, steamy dripping with buttery spread, drizzled with my favorite syrup of the season as the first bite melts in my mouth.
 
Gluten Free Clementine Waffles 
Wet Ingredients
2 large eggs
3 Tablespoon Grapeseed Oil
1 teaspoon GF vanilla
**Optional but highly recommended – Enjoy Life Chocolate Chunks or Chips – GF/DF to bake into the waffles or add on top.**
approximately 2-3 Tbs for the waffle iron Organic Coconut Spread – Earth Balance
Dry Ingredients
2 pinches of sea salt
1 1/2 tsp GF baking powder
1/2 tsp cinnamon
In a medium bowl, add the eggs, vanilla, coconut milk and clementine syrup.
In a second medium size bowl add the dry ingredients and use a whisk to break up any clumps.
Slowly add the flour mixture to the wet mixture. Use a large silicone spoon to mix by hand.
Please note that there may be some lumps and that is ok.  Perfect actually, because it creates airy pockets.
Let the batter sit and meld for 10 minutes while you heat up your waffle iron.
I like to place my waffle iron on a heat safe board.
Add some of the Organic Coconut Spread to the bottom of the waffle iron
and close it while it is heating.
Set the heat to medium.
Use a medium scoop to place the batter onto the waffle iron.
Cook according to your waffle iron settings.
This recipe makes 6 large round waffles.
Serve with non-dairy buttery spread, Candied Clementine Syrup and chocolate chunks for a more decadent brunch.  Make sure there is plenty of hot coffee or tea and be ready to sit back and dive in!

If you want to make extra to freeze, cook the waffles just under so that when you put them in the toaster they will be perfectly toasty.  Make sure the waffles are completely cooled on a rack to prevent moisture build up, aka ice crystals. I put the waffles in a large freezer bag. I use a sharpie to mark GF DF Clementine Waffles or Clementine Chocolate Waffles and the date I made them on the outside of the bag.  I have a defrost setting on my toaster, I use defrost setting once. Then I set it to medium to toast the waffles! If you do not have a defrost setting, take the waffles out of the freezer bag and place on a rack for 3-5 minutes while you make your coffee or tea.
 
 
 I woke up extra early today.  It the mood for comfort food and a sort of a celebration.  It is somewhat of a mile-marker for me.  Ten years ago today, I was in an auto accident that triggered Celiac Disease and daily Chronic Pain.  I feel very blessed for my life and all experiences that go with it. I have learned so much in the past ten years.  I have met so many amazing people.  Although each day has been felt with many daily challenges, I know that I have a choice to make the most out of each day.   There have been some key people and moments in my life that I will be forever grateful.  I want to thank my mom, my dog Mac, family and friends for their never-ending love and support. I love each day that I am able to create, write and share my thoughts with you on my blog.  I love sharing my experiences and obsession for making the best Gluten-Free recipes that I can dream up. I love my blog because it gives me a reason to get out of bed. It is the best therapy I have ever experienced.  I thank you for reading, baking and cooking along with me over the years.  I love that even if I am away from my blog, usually due to a flare, you are there when I return. Your support means the world to me, more than you will ever truly know.

Gluten-Free Clementine Chocolate Almond Biscotti

Louis Armsrong is singing “Winter Wonderland” in the background and I am making a pot of Starbucks Christmas coffee and Tazo tea from Starbucks.  I’m getting ready for a good ol’ fashioned evening in front of the fireplace, listening to our favorite music and catching up with friends.  I can’t think of a better treat to serve with coffee and tea than my newest favorite, Gluten-Free Clementine Chocolate Almond Biscotti made with my Candied Clementine Syrup.

Just think Clementine Chocolate and Almond dunking into your favorite hot beverage and creating the perfect bite in one quick swoop!

makes approximately 2 dozen biscotti

dairy-free too! 

2 cups Bob’s Red Mill Gluten-Free Almond flour

1/3 cup Gluten-Free Multipurpose flour mix, Bob’s Red Mill, Pamela’s Products, or Maninis GF Multiuso *Cup4Cup contains Milk Powder and is not Dairy-Free

1 1/2 teaspoons Gluten-Free baking powder

1/2 teaspoon sea salt

1/4 teaspoon cinnamon

1/4 cup grape seed oil

1 cup Candied Clementine Syrup

1 teaspoon Nielsen-Massey Madagascar Pure Vanilla Extract, Gluten-Free 

2 eggs

1/2 cup chopped almonds

1/2 cup Enjoy Life GF/DF Chocolate Chunks or Chips

Combine the flour, baking powder, cinnamon and salt in a food processor.

Slowly add the oil, pulse 1-2 times.

Add the Clementine syrup, pulse 1-2 times.

Add the eggs and vanilla,  pulse until all incorporated.

Gently incorporate the chopped almonds and chocolate.

Pre-heat the oven to 350 degrees.

First Bake 

Place a sheet of parchment paper on a baking sheet.

Scoop out  the dough with a silicone spatula or spoon.

Spread the dough out to make a long loaf approximately three inches wide and almost the length of your baking sheet 13 inches long. Smooth the top with the silicone spatula.

Bake in the oven for 30 minutes.

Take it out and let it cool for at least 1 hour.

Second Bake

Pre-heat the oven to 350 degrees.

Cut slices 1/2 inch thick on the diagonal with a serrated knife.

Place the slices, standing up, next to each other on the baking sheet with parchment paper.       I reuse my previous paper, even if it is slightly messy. 

Bake – 15 – 20 minutes until the centers are slightly dry.

Remove from oven and let cool on a baking rack for at least one hour prior to serving.

Let the biscotti sit out to continue to dry. If you have leftovers,                                                         place in an airtight container or tall jar.

**Add a few biscotti to a bag with a bow for an easy gift with some coffee beans or specialty tea.

Candied Clementine Syrup

Oh Clementine, Oh Clementine how I love to eat thee!

I absolutely love this time of year because for all of the wonderful flavors that it brings.

Luckily for us ’tis the season for Cuties Clementines!

Candied Clementine Syrup

makes approximately 3 1/2 cups 

6 washed Clementines, cut

1 cup cold filtered water

2 cups Zulka Organic Cane Sugar

Pre-heat the oven to 350 degrees.

Place the clementines in a Le Creuset French Oven  or a pot with a lid, with the skin side down.  Add the water and then sprinkle the sugar on top of the Clementines and put the lid on.

Carefully place the pot in the oven and cook for 2 1/2 – 3 hours.

Carefully take out of the oven and remove the lid, keeping away from the steam. 

Let cool, uncovered on a rack for at least 1 hour.

Add mixture to the food processor and pulse to the consistency you desire.  I like to keep a few peels visible for a tad bit of texture and extra pretty bites.

Serve with scones, waffles, biscuits or add to recipes to give them a                                     wonderful Clementine flavor. Store in the refrigerator in a tight sealing jar,  for 1 week            or in a freezer bag for up to 2 months.

Must Have Gluten-Free Makeup 2013

My newest addition to my gift list, Must Have Gluten-Free Makeup 2013. Who knew that having Celiac Disease and living a Gluten-Free lifestyle meant we had to make sure our makeup is Gluten-Free?  Well I learned the hard way in the very beginning almost 10 years ago.  I am one of those people that habitually applies tinted moisturizer to my lips.  Well, let’s just say that we definitely digest what we put on our lips. I was telling Ashley, when I was a little girl all I ever wanted to do was play “makeup”. I remember going over to my friend’s house and playing with her mom’s makeup case that had all sorts of colors in small containers that I thought were so beautiful. I used to try every color for my eyes, cheeks and lips. I never worried about foundation or mascara because I was too young to realize how it really worked. (Now I totally get it!) Wearing makeup was the farthest thing from my mind but I knew I had hit rock bottom. I vowed to get my health and glow back as I picked myself off of the cold bathroom floor.

Easy Gluten-Free Christmas Cookies

A reader contacted me today asking for an Easy Gluten-Free Christmas Cookies recipe that his kids could make.   He wanted to bring some Gluten-Free cookies to his office for a holiday party for a few people that are Gluten-Free.  The reader is not Gluten-Free but lucky for me he still likes to follow my blog. I suggested that they buy one of my favorite cookie mixes so that they didn’t have to buy any extra Gluten-Free ingredients than needed.  I love using Pamela’s Products when I need a recipe to be fast and easy.  Pamela’s mixes are also great for introducing Gluten-Free baking to new bakers or people that are newly diagnosed to the Gluten-Free lifestyle.  Pamela’s Products are found at most major grocery stores across the USA.

Double Chocolate Peppermint Cookies

Pre-heat the oven to 350 degrees and place the rack in the middle of the oven.

1 bag  Pamela’s Products Gluten-Free Cookies

1 egg

8 Tbs butter

1 tsp cinnamon

1 tsp vanilla

2 Tbs Hershey’s 100% cocoa powder

1 bag Hershey’s semi-sweet chocolate chips

Aprroximately 2 cups peppermint candy canes, crushed or broken – Spangler, TruJoy Sweets, and Hammond’s Candies are Gluten-Free but please, always read the label.

Using a standing or hand mixer, blend the contents of the cookie mix in a bowl with the butter, egg, cinnamon, vanilla and cocoa powder. Cover the mixing bowl and chill in the refrigerator for 30 minutes to let the flavors meld.

Take the dough out and use a spring scoop or two spoons to make balls with the dough.  Place them on a baking sheet lined with parchment paper.

Use the back of the spring scoop or spoon to gently press the ball down leaving an indentation.  *This will  hopefully bake with a small indentation that will be the perfect place for the melted chocolate to puddle and sit … Oh my!  If the indentation does not stay, use the back of a spoon to gently push the cookie down while they are cooling.

Bake 9-11 minutes.  Let cool on a baking rack.

Melt the chocolate chips in a double boiler while stirring.  If you do not have double boiler use a small slow cooker or the microwave. Melting times will vary.

Once the chocolate is all melted use a spoon to scoop the chocolate onto the cookies.  Sprinkle the tops with crushed peppermint candies.  Let cool before storing in a tight sealing container.

I suggest enjoying these cookies within 1-2 days so they are fresh.  I am sure once you start baking them it will not be that hard.

TIP – if you have a candy cane shape cookie cutter or a favorite shape, you could rollout the dough between 2 sheets of parchment paper and cut the cookies out.  Bake, cool and top with the melted chocolate and peppermint pieces.

What is the one thing that your mother always told you to do when you were younger?

Take care of your skin, after all it is the largest organ of your body. 

My favorite beauty secret is HANA Organic Skincare which is handmade on Bainbridge Island, Washington.  This very small, lovely local company uses certified Organic and Demeter Biodynamic ingredients.

I recently met with Karen Ries, owner and creator of HANA Organic Skincare, which started in 2010.  It turns out that Karen found her passion while studying to be an herbalist. She originally wanted to make medicines for her family. During the course, the students were required to make skincare products. So by chance she started to make the products and use them on her skin. She used to get eczema every few months so she tried her products on her rashes and they made it go away.  Of course she was thrilled with the results but in the process she discovered her passion of making a truly natural skincare product.  Karen shared her class project products with her family and friends. Once their products were gone they began to ask her to please make more!  She realized that she loved making products and that this could really be a business.  Karen realized that it was the process of creating and making wonderfully nourishing products to nurture our bodies. It was fitting that when Karen thought about a name for the company she wanted something to represent that nurturing spirit and decided to call the business – HANA, her daughter’s name.

We do care what you put on your body and what goes into your skin. Your skin is just as important to me as mine. We make small batches.  I test everything on myself.”  Karen is so dedicated that she is thinking about buying a farm to grow as many of her own ingredients that she can.  Currently she only buys the best Organic ingredients to meet her shared high quality standards.  Karen makes small batches of her products because they are meant to be used within a timely manner and not sit around.  If a product sits on a shelf, it needs preservatives and chemicals and that is what she avoids.

We talked more about skin conditions and I explained to her that during the diagnosing process, people with Celiac Disease can have skin irritation symptoms or Celiac of the Skin called Dermatitis Herpetiformis (DH).  DH is extremely itchy, chronic conditions that requires medication and a strict Gluten-Free diet.  DH often looks like eczema. I asked her if she had anything that would help quell symptoms of DH or other irritations. Karen says that her Lavender Grains are very gentle and nourishing.  In fact this product contains certified Gluten-Free oats. Karen says the combination of the lavender and oats is one of the best things to help quell skin irritations.

I absolutely love to fill my house with family and friends and entertain, especially during the holidays.  I look forward to making my home beautiful with my homemade Gluten-Free food and displaying it on the most lovely entertaining accessories.  I have found the absolute Must Have Entertaining Accessories of 2013 and I can’t wait to share them with you. 

The trick to entertaining is having the perfect platters, cake stands and serving pieces to showcase your meal and party food.  I always say you can never have enough serving pieces! You never know if someone is going to walk in with a surprise treat to share, so you always need extra stands and platters. Every serving piece should be looked at as a frame that makes your food the center of attention.  I love having various heights or layers on my buffet display all sorts of foods and make the best use of small spaces. Everything looks so pretty on a porcelain or glass plate or platter. Don’t you agree?!  I like to keep with traditional neutral colors white, black and glass for my main serving pieces to show off my sweet and savory treats best.  I also love using special holiday mugs and dishes that are not my everyday collection.  I think it is fun to mix patterns with the same color tones.

One of my absolutely favorite sites is Layla Grayce, that features Rosanna, my favorite handcrafted entertaining accessories.  The Rosanna style is traditional with a modern twist.  The table top pieces and trinkets offer so many wonderful treasures including cake stands in black, white, pastels and textures. Slow Cooked Savory Herbed Amaranth

When you think of Amaranth you might think of an ingredient in your Gluten-Free flours. Not so fast, Amaranth is an Ancient seed! Yes, a SEED not a grain! So if you are on a grain-free diet you can enjoy this naturally Gluten-Free seed. The bonus is you will get all the benefits of this seed because it is a complete protein with high amino acids including lysine. We need lysine, which is not produced in our body, to help our collagen formation, skin, bones and connective tissue.  The only way for us to get lysine is via our food.

Amaranth Seed has a grassy, earthy flavor to it.  I discovered it years ago and find that my body does not react to it like other seeds and grains that are Gluten-Free.  (I react to quinoa and certified oats, even if they are certified Gluten-Free.) I decided to make my Slow Cooked Savory Herbed Amaranth in my slow cooker the other day and it worked out beautifully. It is the perfect Gluten-Free dish to go with everything or by itself.  I think this is my new favorite warm meal or side dish for cold mornings and nights.  I think Amaranth is equally a sweet or savory treat.

This is the basic recipe – if you want it more **versatile or as a vegan dish, I suggest using vegetable broth. Otherwise if you are making it as a savory or side dish feel free to use your favorite chicken, turkey or beef broth.

Slow Cooked Savory Herbed Amaranth

1 cup Bob’s Red Mill Organic Amaranth

3 cups Pacific Foods Organic vegetable broth 

1 tsp smoked sea salt

1 tsp black pepper

1/4 cup diced yellow onion

3 garlic cloves, chopped

1 tsp thyme

1 tsp oregano

1 tsp rosemary

1/4 tsp celery seed

1/4 tsp smoked pimento

Put all of the ingredients into the slow cooker and mix well.  Cook on high for 3 hours or on low for 6-8.  As the Amaranth cooks it will become gelatinous. Remove from heat and let cool. Serve with your favorite meal or as a side dish and top with fresh or dried herbs.

**You could also make a roasted vegetable casserole  - add Brussels sprouts, onions, carrots, celery and make a casserole with the Amaranth on top.  Put it in a casserole pan and into a prey-heated 350 degree oven.   Let it cook for 20-25 minutes.  The amaranth will act as a lid and create moisture for the vegetables to cook.  Top with fresh parsley before serving.

 **If you want it as a sweet warm bowl for breakfast to replace oatmeal- add maple syrup, dried or fresh fruit and your favorite nuts.  I absolutely love it because I can’t eat oats and it is nice to cozy up to a warm bowl for breakfast on a cold morning.
