So what does Gluten-Free Pizza have to do with a Celiac Disease Couples Study at PSU? Do you and your significant other share meal time together? I mean really share in the process of planning and creating meals together to support your dietary restrictions living a Gluten-Free lifestyle due to Celiac Disease?
May is Celiac Awareness month and I wanted to share some very interesting information with you about a local “Celiac Disease Couples Study at PSU”. I recently chatted with Lindsey Alley, a graduate researcher in the Social Psychology program at Portland State University, (PSU). Her work focuses on eating behaviors within romantic relationships, and the roles of dietary support, emotions, and social interactions on diet adherence.
Lindsey explained that she used to work at Whole Foods Market several years ago. She found that a large number of people would go to the market in hopes of finding support for Celiac Disease and learning about Gluten-Free foods. Ironically, around the same time, she decided to go back to college to get her graduate degree and further her research in human behaviors. Little did she know that the seed was planted within her to research the lifestyles of people with Celiac Disease and their relationships.
I asked Lindsey what the purpose of the study is and she said, “Eating is an integral part of the human experience, which affects every aspect of our social lives. Celiac patients are in a particularly interesting situation, in that they have been required to alter their “normal” diet to adhere to a strictly Gluten-Free one in order to maintain, or return to, adequate health.”
She also noted that “It seems intuitive, and psychological literature supports, that such a change in behavior would affect not only the emotional well-being of the patient but also that of their closest ties (e.g., spouse, children, best friends). Until now, research has yet to explore dietary adherence as it pertains to couple functioning within the Celiac community. Thus, the aim of this exploratory study is to gain a basic understanding of what romantic relationships look like for Celiac patients; and specifically, to explore what role dietary support may play in how these individuals and their partners appraise their relationship.”
Lindsey says, “She feels that Celiac Disease provides an exciting arena for food research since the only current treatment is the adoption of an “extreme” dietary shift”. She is excited to share her findings from this study, and knowledge of dietary support from previous research, with the Celiac community!”
Adults with celiac disease and their significant others
are needed for a research study!
People with Celiac Disease are needed to participate in a nationwide survey.
Questions will focus on how you eat, what your relationship is like, and your thoughts about the gluten free diet.
Both medically and self-diagnosed people with Celiac Disease can take this survey.
If you choose to take the survey, they will also contact your significant other or spouse by email to see if he or she would like to take it.
They are looking for couples that have been together for at least six months, and where both members are at least 18 years old.
The survey will take about 20 to 30 minutes to complete. Participation is voluntary, meaning you can decide to quit at any time.
You and your significant other are encouraged to take the survey separate from each other to maintain confidentiality.
Please share this post with your friends and family that have Celiac Disease. The study will end on June 30, 2014.

The sun has been shinning and all I can think about is making something refreshingly slightly sweet and tart! I am not usually a lime person but for some reason I have been craving Limes and the perfect companion – Coconut! I decided to make Gluten-Free and Dairy-Free Coconut Lime Frozen Yogurt. I love love love coconut and so for this fun frozen recipe I am using my favorites and newest products from SoDelicious – Culinary Coconut Milk and Unsweetened Vanilla Cultured Coconut Milk.
Maybe it is all of the talk about the lime shortage but no worries, I have an idea to get your lime craving fix right here. This is so easy, fast, Gluten-Free and Dairy-Free. Santa Cruz Pure Lime Juice is the perfect Organic juice to create the tart flavor to tantalize and quench your tastebuds on a hot day! I used all of my favorite ingredients from SoDelicious, Bob’s Red Mill, Enjoy Life Foods and tools from Cuisinart and Weck Jars. This was a fun and festive unexpected party in my kitchen when some new neighbors stopped by for a chat.
1/4 cup honey
1 3/4 cup coconut flakes
pinch of sea salt
1 lime zest
1 1/2 cup Bob’s Red Mill almond flour
1 1/2 cup Bob’s Red Mill hazelnut flour
1/4 tsp. cinnamon
6 – 8 Weck jars with lids
Silicone spoon or round spatula
Mix the coconut milk, cultured milk (yogurt), honey and lime juice in a pitcher. Pour it into your ice cream/frozen yogurt maker. Turn the machine on and slowly add 1 cup coconut flakes and sea salt. Add the lime zest. Allow the maker to mix and freeze the ingredients for approximately 20-30 minutes depending on your machine. (check the owners manual for time because the newer machines are faster). Set a timer so that you will hear when it is ready.
While the frozen yogurt is mixing and freezing, set up your jars to begin assembling.
In a bowl, mix the almond, hazelnut flours with the 3/4 cup of coconut flakes and cinnamon. Use a whisk to incorporate.
Add a generous layer to the bottom of the jars. Set the remaining aside to use as topping.
When the timer dings, turn off the machine and carefully remove the top. Use a silicone spoon to scoop out the frozen yogurt. Add some to each jar. Create layers with the nut and coconut to make a parfait or just add a generous portion to the top after you fill it with frozen yogurt. Secure the tops on the jars and *chill in the freezer for 20 minutes before serving to allow the flavors to meld.
*Please note that you can serve the frozen yogurt right away, skipping the extra freeze time, if you have an impatient crowd, it will have a softer texture.
Take the jars out of the freezer and allow a few minutes – 2-3 before removing the lids.
Add some dark chocolate, extra coconut and a lime wedge if you are lucky enough to find some!
You can also store extra servings with the lid on in the freezer. Just as above, allow a few minutes for the jar to warm to room temperature, 3-5 minutes. Add your toppings – coconut and dark chocolate as desired.
I absolutely love the combination of coconut, lime and dark chocolate! The tart lime with the sweet coconut and the deep bitterness of the chocolate. Oh and then the nuts! Wow! It is a must try if even just one big bite. Let me know what you think?!
I have a Cuisinart Ice Cream/Yogurt maker and I absolutely love it! It is a few years old but I use it all the time, especially in the summer! I suggest buying an extra freezer bowl to make additional flavors and keep everyone happy. Nothing better than a full belly of delicious home made frozen Gluten-Free, Dairy-Free yogurt on a hot day!

I created these recipes for anyone who is busy and hungry for learning new ways to make a meal Super Easy, Gluten-Free and Fast! All of these Super Easy Gluten-Free Cinco de Mayo Meals are flavorful and healthy for everyday celebrations. So here it goes – just a few ingredients and you will be surprised as to how happy your family and friends will be with your Mexican cooking!
I used Jennie-O Turkey Store Lean Ground Turkey and Wholly Guacamole for all of these recipes. I used my “Secret Salsa Turkey Recipe” for all of these ideas and cooked it the same way.
The secret to my recipe is that is has all of the flavor without the mess of chopping and extra expense of buying a ton of ingredients. I used a local fresh, Organic (Medium Hot) salsa that I bought at my Farmer’s Market. I also use a Pico de Gallo in place of salsa as well if I want it more chunky. Pick the heat level of the salsa that you and what your family and guests will like. (I always have a spare hotter salsa on the side when serving any meal so that the extra brave people can add a little more to their liking.)
“Secret Salsa Turkey Recipe”
1 package – 1.25 lbs./ 20 oz. Jennie-O Turkey Store Lean Ground Turkey
2 tablespoons Olive Oil for the pan to cook the turkey and a little more for the individual pans to bake the enchiladas.
1 cup Organic Gluten-Free Salsa or Pico de Gallo – Mild, Medium or Hot
Cook the turkey over medium-high heat to 165 degrees. I always follow the safe cooking tips provided on the Jennie-O Turkey Store site. Lower the heat to simmer. Removed some of the natural liquid. Add approximately 1 cup of the salsa to the cooked turkey and mixed well. Let it simmer over low heat for 5-8 minutes, then removed it from the heat.
I have been craving enchiladas lately and decided I just had to make them with a healthier twist. I used ground turkey meat from Jennie-O Turkey Store. I came up with a recipe to cook the ground turkey that locks in all the flavor and moistness. The Secret is my – Secret Salsa Turkey Recipe!
#1 Super Easy Gluten-Free Red Chile Cheesy Turkey Enchiladas
1 package – 1.25 lbs./ 20 oz. Jennie-O Turkey Store Lean Ground Turkey
2 tablespoons Olive Oil for the pan to cook the turkey and a little more for the individual pans to bake the enchiladas.
1 cup Organic Gluten-Free Salsa or Pico de Gallo – Mild, Medium or Hot
Tortillaland Corn Tortillas – Gluten-Free, no preservatives, no trans, sat fat or cholesterol – these are uncooked and you need to cook them before eating. These are THE BEST GF CORN TORTILLAS!
Frontera Red Chille Enchilada Sauce Gluten-Free, all natural, no preservatives - 1 package = 4 Enchiladas so please buy enough for the amount you are serving. I bought 2 packages to make 8 Enchiladas.
1-2 packages Wholly Guacamole - Gluten-Free, Dairy-Free, Kosher, No Preservatives and all natural. I always buy extra for scooping up with chips and to make sure I have enough!
1-2 fresh Roma Tomatoes
Cook the GF corn Tortilla Land tortillas over medium-high heat on a comal or cast iron pan.
Add 1 tsp of olive oil to the individual pans. Place the tortilla in the middle of the pan and add 2 Tbs of cooked turkey to the middle. Roll up the enchiladas tightly with the edges on the bottom. If you are adding cheese add it with the meat. Add the red chile sauce and then some cheese on top of the sauce. This makes them extra creamy and you know it has cheese if you are making 2 different kinds. Place 2-3 enchiladas in each serving dish for a hearty meal.
To make the non-cheese enchiladas, add the meat and roll up with the edges down and then top with the red chile sauce. Cover the pan with foil while cooking to keep them moist.
*Please note you can make this in a large serving dish with all cheese or all non-cheese enchiladas as well for larger groups. I like to make individual servings for a smaller group.
Pre-heat the oven to 350 degrees and cook the cheese enchiladas, smaller potions, uncovered for 10 – 12 minutes.
Cook the non-cheese, covered with foil for 10 minutes.
If you are cooking a larger serving, cook cheese, uncovered 15-20 minutes and non-cheese covered 15 minutes or until heated through.
Let cool slightly before serving. Serve with a generous side of guacamole topped with fresh cut tomato slices.
#2 Super Easy Gluten-Free Cheesy Turkey Quesadillas
Secret Salsa Turkey Recipe
Cook the Tortilla Land Corn tortillas
Add 1 Tbs of cheese and 1 Tbs of Turkey on top of one tortilla while it is still on the pan.
Add a little more cheese on top and then the second cooked tortilla.
Use a lid from a pan to press down the quesadilla, just like making a panini so that the cheese will melt and make it stick together. Cook approximately 2-3 minutes. Carefully flip over and use the lid again to press down. Remove from heat and place on a cutting board. Use a knife or a pizza cutter to cut the quesadilla into 4 pieces. Top with guacamole and fresh tomato slices.
#3 Super Easy Gluten-Free Tacos
Secret Salsa Turkey Recipe
6 GF Tortilla Land Corn Tortillas
1-2 Roma Tomatoes
1 package Wholly Guacamole
Cook the Turkey as above and set aside. Cook the tortillas and add the turkey, lettuce, tomato and guacamole. Fold the tortilla or roll them over to serve and eat.
#4 Super Easy Gluten-Free Taco Salad
Secret Salsa Turkey Recipe
Organic chopped green lettuce
Organic fresh Salsa or Pico de Gallo
Cheese – optional
The Better Chip – Gluten-Free, Non-GMO
In each bowl add the chips, lettuce, 1/2 cup of cooked turkey, cheese, salsa/pico de gallo, cilantro and guacamole. Mix together and enjoy!
#5 Super Easy Gluten-Free Turkey Nachos
Secret Spicy Salsa Turkey
Sargento shredded Mexican cheese -
1 medium, purple/red onion – diced
1 cup sliced jalapeños – serve on the side and add as desired
2- 3 cups extra Organic Salsa or Pica de Gallo
Pre-heat oven to 350 degrees.
On a baking sheet lined with parchment paper, add a layer of chips to the baking sheet. Make sure the chips are close but not on top of each other. Add some cooked turkey, cheese and diced onion on top. Cook in the oven 5-10 minute or until the cheese is melted. Carefully take the pan out of the oven and let cool slightly. Serve with a generous portion of guacamole, salsa and jalepeños as desired.
I like to make each chip individually so that each bite is perfectly portioned and satisfying. Never missing any ingredient.

I can’t believe I am finally saying it but it is that time of year! It is time to buy Gluten Free Girl Scout Cookies 2014! Well, at least some of us get to enjoy them, in some parts of the country you can now buy the newest addition to the Girl Scout Cookie list – Certified Gluten-Free by GIG – Gluten Free Chocolate Chip Shortbread Cookies. Not sure why the Girl Scouts decided to “test market” the cookies because apparently they are selling like Gluten Free hot cakes! (Umm …no-duh!)
I can tell you that you can download the Girl Scout Cookie app for your smartphone to track down the cookies near you but have some patience. It isn’t exactly working very well. I think it is overloaded with the overall demand of the yearly sale. I think I found out some better more direct information for you by using my inner Gluten Free cookie monster investigative skills. I was able to find out that the baker is ABC Bakers and not all Girl Scout Councils use this baker.
A full list of Girl Scout Council by state that use this baker and are selling the Gluten Free Chocolate Chip Shortbread Girl Scout Cookies is listed here. Honestly, your best bet is to call a friend or family member that lives in an area listed and ask them to order them or buy and ship them to you especially if you live in WA or OR.
Luckily for me I was able to score a bag from a very dear college friend, Sheila that lives in the Philly area. She sent me a bag and I couldn’t wait to rip them open and try them! They are bite size, flavorful little treats that are just big enough to quickly dunk into your coffee, milk or hot cocoa. I just wish that we could all enjoy them and be part of the Girl Scout Cookie fundraiser.
I have to say that it makes me a tad bit giddy this year to finally walk by, even virtually, a Girl Scout Cookie stand and to know that we – Gluten Free Foodies are included in the joy of Girl Scout Cookie Season!

What does Certified Gluten-Free Oats mean to people with Celiac Disease?

I have been a big Downton Abbey fan since day one. I know there are millions of fans out there too, so this gift is perfect for everyone!
