The sun has been shinning and all I can think about is making something refreshingly slightly sweet and tart! I am not usually a lime person but for some reason I have been craving Limes and the perfect companion – Coconut!  I decided to make Gluten-Free and Dairy-Free Coconut Lime Frozen Yogurt. I love love love coconut and so for this fun frozen recipe I am using my favorites and newest products from SoDelicious – Culinary Coconut Milk and Unsweetened Vanilla Cultured Coconut Milk.

Maybe it is all of the talk about the lime shortage but no worries, I have an idea to get your lime craving fix right here. This is so easy, fast, Gluten-Free and Dairy-Free.  Santa Cruz Pure Lime Juice is the perfect Organic juice to create the tart flavor to tantalize and quench your tastebuds on a hot day!  I used all of my favorite ingredients from SoDelicious, Bob’s Red Mill, Enjoy Life Foods and tools from Cuisinart and Weck Jars.  This was a fun and festive unexpected party in my kitchen when some new neighbors stopped by for a chat.

Ingredients

11 oz So Delicious Lite Culinary Coconut Milk

16 oz So Delicious Unsweetened Vanilla Cultured Coconut Milk

1 cup Santa Cruz Organic Pure Lime Juice

1/4 cup honey

1 3/4 cup coconut flakes

pinch of sea salt

1 lime zest

1 1/2 cup Bob’s Red Mill almond flour

1 1/2 cup Bob’s Red Mill hazelnut flour

1/4 tsp. cinnamon

Enjoy Life – Dark Chocolate chips or chunks – Gluten-Free, Dairy-Free optional

Tools

Cuisinart Ice Cream/Yogurt Maker

6 – 8 Weck jars with lids

tall pitcher

mixing bowl

whisk

Silicone spoon or round spatula

Directions

Mix the coconut milk, cultured milk (yogurt), honey and lime juice in a pitcher. Pour it into your ice cream/frozen yogurt maker.  Turn the machine on and slowly add 1 cup coconut flakes and sea salt.  Add the lime zest.   Allow the maker to mix and freeze the ingredients for approximately 20-30 minutes depending on your machine. (check the owners manual for time because the newer machines are faster). Set a timer so that you will hear when it is ready.

While the frozen yogurt is mixing and freezing, set up your jars to begin assembling.

In a bowl, mix the almond, hazelnut flours with the 3/4 cup of coconut flakes and cinnamon.  Use a whisk to incorporate.

Add a generous layer to the bottom of the jars.  Set the remaining aside to use as topping.

When the timer dings, turn off the machine and carefully remove the top. Use a silicone spoon to scoop out the frozen yogurt.  Add some to each jar.  Create layers with the nut and coconut to make a parfait or just add a generous portion to the top after you fill it with frozen yogurt.  Secure the tops on the jars and *chill in the freezer for 20 minutes before serving to allow the flavors to meld.

*Please note that you can serve the frozen yogurt right away, skipping the extra freeze time,  if you have an impatient crowd, it will have a softer texture.

Take the jars out of the freezer and allow a few minutes – 2-3 before removing the lids.

Add some dark chocolate, extra coconut and a lime wedge if you are lucky enough to find some!

You can also store extra servings with the lid on in the freezer.  Just as above, allow a few minutes for the jar to warm to room temperature, 3-5 minutes.  Add your toppings – coconut and dark chocolate as desired.

I absolutely love the combination of coconut, lime and dark chocolate! The tart lime with the sweet coconut and the deep bitterness of the chocolate. Oh and then the nuts! Wow! It is a must try if even just one big bite.   Let me know what you think?!

I have a Cuisinart Ice Cream/Yogurt maker and I absolutely love it! It is a few years old but I use it all the time, especially in the summer! I suggest buying an extra freezer bowl to make additional flavors and keep everyone happy.  Nothing better than a full belly of delicious home made frozen Gluten-Free, Dairy-Free yogurt on a hot day!

I hope you try my recipe for Gluten-Free and Dairy-Free Coconut Lime Frozen Yogurt and enjoy it as much as I do.  I can now say I am a Lime person!  Since I made this recipe I have also used other citrus flavors – fresh squeezed Meyer Lemon, tangerine and blood orange  I just love the citrus with the creaminess of the coconut. Try it! Which is your favorite combination?

Salud!

Five Super Easy Gluten-Free Cinco de Mayo Meals

I created these recipes for anyone who is busy and hungry for learning new ways to make a meal Super Easy, Gluten-Free and Fast!  All of these Super Easy Gluten-Free Cinco de Mayo Meals are flavorful and healthy for everyday celebrations.  So here it goes – just a few ingredients and you will be surprised as to how happy your family and friends will be with your Mexican cooking!

gluten-free cheesy red chile turkey enchiladas
gluten-free cheesy red chile turkey enchiladas

I used Jennie-O Turkey Store Lean Ground Turkey and Wholly Guacamole for all of these recipes.  I used my “Secret Salsa Turkey Recipe” for all of these ideas and cooked it the same way.

The secret to my recipe is that is has all of the flavor without the mess of chopping and extra expense of buying a ton of ingredients.  I used a local fresh, Organic (Medium Hot) salsa that I bought at my Farmer’s Market.  I also use a Pico de Gallo in place of salsa as well if I want it more chunky.  Pick the heat level of the salsa that you and what your family and guests will like.  (I always have a spare hotter salsa on the side when serving any meal so that the extra brave people can add a little more to their liking.)

“Secret Salsa Turkey Recipe”

1 package – 1.25 lbs./ 20 oz.  Jennie-O Turkey Store Lean Ground Turkey

2 tablespoons Olive Oil for the pan to cook the turkey and a little more for the individual pans to bake the enchiladas.

1 cup Organic Gluten-Free Salsa or Pico de Gallo – Mild, Medium or Hot

Cook the turkey over medium-high heat to 165 degrees.  I always follow the safe cooking tips provided on the Jennie-O Turkey Store site.   Lower the heat to simmer.  Removed some of the natural liquid. Add approximately 1 cup of the salsa to the cooked turkey and mixed well.  Let it simmer over low heat for 5-8 minutes, then removed it from the heat.

I have been craving enchiladas lately and decided I just had to make them with a healthier twist.  I used ground turkey meat from Jennie-O Turkey Store. I came up with a recipe to cook the ground turkey that locks in all the flavor and moistness.  The Secret is my – Secret Salsa Turkey Recipe!

#1 Super Easy Gluten-Free Red Chile Cheesy Turkey Enchiladas

1 package – 1.25 lbs./ 20 oz.  Jennie-O Turkey Store Lean Ground Turkey

2 tablespoons Olive Oil for the pan to cook the turkey and a little more for the individual pans to bake the enchiladas.

1 cup Organic Gluten-Free Salsa or Pico de Gallo – Mild, Medium or Hot

Tortillaland Corn Tortillas – Gluten-Free, no preservatives, no trans, sat fat or cholesterol – these are uncooked and you need to cook them before eating.  These are THE BEST GF CORN TORTILLAS!

Frontera Red Chille Enchilada Sauce Gluten-Free, all natural, no preservatives - 1 package = 4 Enchiladas so please buy enough for the amount you are serving. I bought 2 packages to make 8 Enchiladas.

2-3 cups Sargento Shredded 4 Cheese Mexican blend - Gluten-Free – *see Gluten-Free statement here

1-2 packages Wholly Guacamole  - Gluten-Free, Dairy-Free, Kosher, No Preservatives and all natural.  I always buy extra for scooping up with chips and to make sure I have enough!

1-2 fresh Roma Tomatoes

Cook the GF corn Tortilla Land tortillas over medium-high heat on a comal or cast iron pan.

Add 1 tsp of olive oil to the individual pans. Place the tortilla in the middle of the pan and add 2 Tbs of cooked turkey to the middle.  Roll up the enchiladas tightly with the edges on the bottom.  If you are adding cheese add it with the meat.  Add the red chile sauce and then some cheese on top of the sauce.  This makes them extra creamy and  you know it has cheese if you are making 2 different kinds.  Place 2-3 enchiladas in each serving dish for a hearty meal.

To make the non-cheese enchiladas, add the meat and roll up with the edges down and then top with the red chile sauce. Cover the pan with foil while cooking to keep them moist.

*Please note you can make this in a large serving dish with all cheese or all non-cheese enchiladas as well for larger groups.  I like to make individual servings for a smaller group.

Pre-heat the oven to 350 degrees and cook the cheese enchiladas, smaller potions,  uncovered for 10 – 12 minutes.

Cook the non-cheese, covered with foil for 10 minutes.

If you are cooking a larger serving, cook cheese, uncovered 15-20 minutes and non-cheese covered 15 minutes or until heated through.

Let cool slightly before serving.  Serve with a generous side of guacamole topped with fresh cut tomato slices.

Cook the Tortilla Land Corn tortillas

Add 1 Tbs of cheese and 1 Tbs of Turkey on top of one tortilla while it is still on the pan.

Add a little more cheese on top and then the second cooked tortilla.

Use a lid from a pan to press down the quesadilla, just like making a panini so that the cheese will melt and make it stick together.  Cook approximately 2-3 minutes.  Carefully flip over and use the lid again to press down.  Remove from heat and place on a cutting board.  Use a knife or a pizza cutter to cut the quesadilla into 4 pieces.   Top with guacamole and fresh tomato slices.

Sargento shredded Mexican cheese -

Wholly Guacamole

1 medium, purple/red onion – diced

1 cup sliced jalapeños – serve on the side and add as desired

2- 3 cups extra Organic Salsa or Pica de Gallo

Pre-heat oven to 350 degrees.

On a baking sheet lined with parchment paper, add a layer of chips to the baking sheet.  Make sure the chips are close but not on top of each other.   Add some cooked turkey, cheese and diced onion on top.   Cook in the oven 5-10 minute or until the cheese is melted.  Carefully take the pan out of the oven and let cool slightly.  Serve with a generous portion of guacamole, salsa and jalepeños as desired.

I like to make each chip individually so that each bite is perfectly portioned and satisfying.  Never missing any ingredient.

Disclosure statement – I received complimentary Jennie-O Lean Turkey and Wholly Guacamole products from the companies.  By no means did this change or influence my opinion of either company.  I purchase both all the time on my own for my recipes and healthy meal and snack planning.

All of the additional ingredients I purchased and gladly share my favorites with you in hopes that you have,  Super Easy Gluten-Free Cinco de Mayo Meals.

Oh my goodness! I am feeling just a tad giddy.  I am announcing Pamela’s Products NEW Gluten-Free Figgies and Jammies Cookies!  When I was a kid I used to love fig bars.  We used to enjoy them with my Nana in the afternoons after our nap.  It was so hard to take a nap after swimming all morning because I was so excited for our treat. In the summer time we would sit outside with our iced tea and 2 fig cookies.  It was always the perfect treat to get our energy going and get quickly back into the swimming pool to escape our hot Texas summers. Sweet memories must fade because when I was diagnosed with Celiac Disease 10 years ago, it was just another love crossed off my list to say so long, farewell … but just recently I started craving, dreaming actually about those fig cookies. Well guess what?!?!?  I happened to find them at a lovely little local store called Lingonberries Market in Vancouver, WA. I thought I had died and gone to heaven.  I couldn’t wait to get home, make a pot of tea and dive in!

I am bananas about Barnana Organic Banana Chewy Bites! Naturally sweet, flavorful Gluten Free snacks that are ready to go with you on your daily adventures! Packed in resealable bags Barnana offers 2 flavors – Organic Original Chewy Banana Bites and Organic Chocolate Chewy Banana Bites.  Oh but there is more to this Organic powerhouse snack, they are verified Non-GMO Project, Dairy Free, Preservative Free, Kosher, good source of potassium, heart healthy fiber and 20 vitamins and minerals.

barnana original chewy banana bites

I love love love these banana-y bites! I especially love that the Original Chewy Bites are raw and help aid in my digestion.  As someone that has Celiac Disease, I am always looking for natural ways to aid my digestion naturally.  Barnana bites are perfect because I feel like it is a naturally sweet little dessert after a meal, after my yoga practice or in between meals. Just a few chewy bites and I am satisfied! The browning is natural and the bite is dusted in banana powder, no added sugar! Barnana snacks are truly GUILT FREE because I am doing something good for me from the inside.

I asked Barnana how their Chewy Bites aid in digestion? They said, “Barnana bananas are  grown in soil alive with nutrients and free of chemicals, the way nature intended. Barnana dehydrates our bananas under 40 °C (104 °F). By using this technique, it allows the nutrition density and natural enzymes to remain intact which are critical in building proteins and rebuilding the body. Raw bananas also harness beneficial mico-organisms that aid in digestion.”

I can say that this original technique allows for the natural sweetness and flavor to come alive on your palate without being overwhelming. I love the chewy texture too which makes it more satisfying for snacking.  Barnana snacks are so great I think I will take them out all Summer long with me on picnics and outdoor concerts as a treat to share with my friends!  Maybe I should get the big bags or a case?! They are also great for traveling too on planes, trains and automobiles! I will definitely need cases!

The Organic Chocolate Bites are a great way to indulge while making sure you get your beneficial heart healthy flavonoids in your daily diet.  Ok, as if I need an excuse to eat chocolate and bananas but really – 54% Organic Cacao tastes incredibly wonderful around 2 pm when you just want that little something to get you moving and focused again.

Gluten Free Girl Scout Cookies 2014!

February 21st, 2014 at 2:03 pm by Lisa - Gluten Free Foodie
  • Comments

I can’t believe I am finally saying it but it is that time of year! It is time to buy Gluten Free Girl Scout Cookies 2014! Well, at least some of us get to enjoy them, in some parts of the country you can now buy the newest addition to the Girl Scout Cookie list – Certified Gluten-Free by GIG – Gluten Free Chocolate Chip Shortbread Cookies.  Not sure why the Girl Scouts decided to “test market” the cookies because apparently they are selling like Gluten Free hot cakes!    (Umm …no-duh!)

gluten free girl scout cookie bag

I can tell you that you can download the Girl Scout Cookie app for your smartphone to track down the cookies near you but have some patience.  It isn’t exactly working very well.  I think it is overloaded with the overall demand of the yearly sale.  I think I found out some better more direct information for you by using my inner Gluten Free cookie monster investigative skills. I was able to find out that the baker is ABC Bakers and not all Girl Scout Councils use this baker.

A full list of Girl Scout Council by state that use this baker and are selling the Gluten Free Chocolate Chip Shortbread Girl Scout Cookies is listed here.    Honestly, your best bet is to call a friend or family member that lives in an area listed and ask them to order them or buy  and ship them to you especially if you live in WA or OR.

Luckily for me I was able to score a bag from a very dear college friend, Sheila that lives in the Philly area.  She sent me a bag and I couldn’t wait to rip them open and try them! They are bite size, flavorful little treats that are just big enough to quickly dunk into your coffee, milk or hot cocoa. I just wish that we could all enjoy them and be part of the Girl Scout Cookie fundraiser.

gluten free chocolate chip girl scout cookies

I have to say that it makes me a tad bit giddy this year to finally walk by, even virtually, a Girl Scout Cookie stand and to know that we – Gluten Free Foodies are included in the joy of Girl Scout Cookie Season!

So go … search, hunt, find and rip open your bag of Gluten Free Chocolate Chip Shortbread Cookies! Oh, but make sure you have your favorite beverage ready to go to dunk and devour! As we Girl Scouts say … always be prepared!

Gotta run and make a pot of my favorite coffee and get ready to dunk!

gluten free shortbread girl scout cookies

I will always have a place in my hear for the Girl Scouts.  I was a Girl Scout, badges and all! I thought I would share one of my favorite memories at Girl Scout Camp around the campfire, multitasking, sewing or crafting and making plans for our next meal! Love the hat with my camp badges on it and the white knee high socks! Yikes! lisa at girl scout camp

I will forever have the Girl Scout Pledge branded in my memory …

Good luck and enjoy! Thanks Sheila!

Yay!

Gluten-Free Downton Abbey Party Gift

I have been a big Downton Abbey fan since day one. I know there are millions of fans out there  too, so this gift is perfect for everyone!   I can’t wait until January 5, 2014, season 4 premiere, to see what twists and turns will happen with the Crawley family and the many wonderfully delicious lines that Violet, Dowager Countess of Grantham will sling this season.

Downton Abbey Tea Pot! Gluten-Free Scone Mix Safely serve your non-GF guests! Sip at home while watching Downton Abbey with your mates. chocolate bacon chips bar Serving set for tea and treats! Downton Abbey Tea gf blueberry scone mix Sip and stay at home.

In the meantime, Christmas is just a few days away so let’s get this Gluten-Free Downton Abbey Party Gift rolling so that everyone on your list will be ready for a party. I selected a few, very proper items to add to a gift bag (Not sure if the limited edition Downton Abbey reusable bag is still available but grab it if you see it.) You can always add the items to a pretty basket  or a serving tray if the bag is gone.  The fun part is that everything can be found at your local World Market in store or online.  Even better they have a few items on sale right now!

A party is only proper if you serve the proper tea, in a proper tea pot, served in a proper tea set…whew! That’s quite a bit of proper wouldn’t you say! I think I need a cuppa-tea and a Gluten-Free biscuit! Speaking of Gluten-Free biscuits, add Pamela’s Products Gluten-Free Shortbread Cookies, found at your local market, to the gift!

Make sure you go online and enter the World Market Downton Abbey Sweepstakes to win a trip to London and more.  Ends 12/27/2013.

You can always buy the previous seasons on your local PBS station during their fundraising campaigns.

So put on your Downton Abbey inspired proper party hat, found on Etsy or your local consignment store and get the house ready for prime viewing in 2014.  Now if we only had house staff to help us get things all tidy … the countdown has begun!

“Mary you will be a wonderful mother” …

“you will be my Mary for all eternity and I love you more and more everyday” – Matthew Crawley.

Good luck shopping and good day to you,

Please note, I added Hammond’s chocolate bar to my gift suggestion. A party really is never complete without chocolate, at least in my book!  Here is Hammond’s list of Gluten-Free items.  I would suggest adding their toffee to the list.  See their site for where to buy.

Gluten-Free Clementine Waffles

gluten-free dairy-free clementine waffles
Regardless if this is the first post that you have read or the 500+ post, you need to know.  My name is Lisa and I am addicted to my Gluten-Free waffles.  I do not make pancakes because I am obsessed with waffles.  I love the crevices that allow the butter or non-dairy buttery spread, syrup and various toppings to hide in.  I love the crispy with the airy texture.  I love that I can make them sweet or savory.  I love their character, golden with smooth and sometimes nubby edges that are fun to eat. I love that there is never an identical waffle as the last one you just ate. I love to eat them with my fingers as the syrup runs down my hand.  I love that I can enjoy them any time of day or night.  I love my Gluten-Free waffles because they are perfect for every occasion, comfort, celebration or just to satisfy my craving. I especially love my Gluten-Free waffle, directly in front of me, that is hot, steamy dripping with buttery spread, drizzled with my favorite syrup of the season as the first bite melts in my mouth.

Gluten Free Clementine Waffles
Wet Ingredients
2 large eggs
3 Tablespoon Grapeseed Oil
1 teaspoon GF vanilla
**Optional but highly recommended – Enjoy Life Chocolate Chunks or Chips – GF/DF to bake into the waffles or add on top.**
approximately 2-3 Tbs for the waffle iron Organic Coconut Spread – Earth Balance
Dry Ingredients
2 pinches of sea salt
1 1/2 tsp GF baking powder
1/2 tsp cinnamon
In a medium bowl, add the eggs, vanilla, coconut milk and clementine syrup.
In a second medium size bowl add the dry ingredients and use a whisk to break up any clumps.
Slowly add the flour mixture to the wet mixture. Use a large silicone spoon to mix by hand.
Please note that there may be some lumps and that is ok.  Perfect actually, because it creates airy pockets.
Let the batter sit and meld for 10 minutes while you heat up your waffle iron.
I like to place my waffle iron on a heat safe board.
Add some of the Organic Coconut Spread to the bottom of the waffle iron
and close it while it is heating.
Set the heat to medium.
Use a medium scoop to place the batter onto the waffle iron.
Cook according to your waffle iron settings.
This recipe makes 6 large round waffles.
Serve with non-dairy buttery spread, Candied Clementine Syrup and chocolate chunks for a more decadent brunch.  Make sure there is plenty of hot coffee or tea and be ready to sit back and dive in!

If you want to make extra to freeze, cook the waffles just under so that when you put them in the toaster they will be perfectly toasty.  Make sure the waffles are completely cooled on a rack to prevent moisture build up, aka ice crystals. I put the waffles in a large freezer bag. I use a sharpie to mark GF DF Clementine Waffles or Clementine Chocolate Waffles and the date I made them on the outside of the bag.  I have a defrost setting on my toaster, I use defrost setting once. Then I set it to medium to toast the waffles! If you do not have a defrost setting, take the waffles out of the freezer bag and place on a rack for 3-5 minutes while you make your coffee or tea.

I woke up extra early today.  It the mood for comfort food and a sort of a celebration.  It is somewhat of a mile-marker for me.  Ten years ago today, I was in an auto accident that triggered Celiac Disease and daily Chronic Pain.  I feel very blessed for my life and all experiences that go with it. I have learned so much in the past ten years.  I have met so many amazing people.  Although each day has been felt with many daily challenges, I know that I have a choice to make the most out of each day.   There have been some key people and moments in my life that I will be forever grateful.  I want to thank my mom, my dog Mac, family and friends for their never-ending love and support. I love each day that I am able to create, write and share my thoughts with you on my blog.  I love sharing my experiences and obsession for making the best Gluten-Free recipes that I can dream up. I love my blog because it gives me a reason to get out of bed. It is the best therapy I have ever experienced.  I thank you for reading, baking and cooking along with me over the years.  I love that even if I am away from my blog, usually due to a flare, you are there when I return. Your support means the world to me, more than you will ever truly know.

Many great big, warm hugs and Gluten-Free waffles to you!
Salud!

Louis Armsrong is singing “Winter Wonderland” in the background and I am making a pot of Starbucks Christmas coffee and Tazo tea from Starbucks.  I’m getting ready for a good ol’ fashioned evening in front of the fireplace, listening to our favorite music and catching up with friends.  I can’t think of a better treat to serve with coffee and tea than my newest favorite, Gluten-Free Clementine Chocolate Almond Biscotti made with my Candied Clementine Syrup.

Just think Clementine Chocolate and Almond dunking into your favorite hot beverage and creating the perfect bite in one quick swoop!

makes approximately 2 dozen biscotti

dairy-free too!

2 cups Bob’s Red Mill Gluten-Free Almond flour

1/3 cup Gluten-Free Multipurpose flour mix, Bob’s Red Mill, Pamela’s Products, or Maninis GF Multiuso *Cup4Cup contains Milk Powder and is not Dairy-Free

1 1/2 teaspoons Gluten-Free baking powder

1/2 teaspoon sea salt

1/4 teaspoon cinnamon

1/4 cup grape seed oil

1 cup Candied Clementine Syrup

1 teaspoon Nielsen-Massey Madagascar Pure Vanilla Extract, Gluten-Free

2 eggs

1/2 cup chopped almonds

1/2 cup Enjoy Life GF/DF Chocolate Chunks or Chips

Combine the flour, baking powder, cinnamon and salt in a food processor.

Slowly add the oil, pulse 1-2 times.

Add the Clementine syrup, pulse 1-2 times.

Add the eggs and vanilla,  pulse until all incorporated.

Gently incorporate the chopped almonds and chocolate.

Pre-heat the oven to 350 degrees.

First Bake

Place a sheet of parchment paper on a baking sheet.

Scoop out  the dough with a silicone spatula or spoon.

Spread the dough out to make a long loaf approximately three inches wide and almost the length of your baking sheet 13 inches long. Smooth the top with the silicone spatula.

Bake in the oven for 30 minutes.

Take it out and let it cool for at least 1 hour.

Second Bake

Pre-heat the oven to 350 degrees.

Cut slices 1/2 inch thick on the diagonal with a serrated knife.

Place the slices, standing up, next to each other on the baking sheet with parchment paper.       I reuse my previous paper, even if it is slightly messy.

Bake – 15 – 20 minutes until the centers are slightly dry.

Remove from oven and let cool on a baking rack for at least one hour prior to serving.

Let the biscotti sit out to continue to dry. If you have leftovers,                                                         place in an airtight container or tall jar.

**Add a few biscotti to a bag with a bow for an easy gift with some coffee beans or specialty tea.
